All by hand

Bear Pond Wines Inc. is proud to say that we do it all by hand, from the formulation of the wine to the label on the bottle.

We first start with selecting the perfect grape or fruit juice, being very careful to select the right taste, coloring and sweetness. We then bring the juice very slowly to the perfect fermentation temperature. Once that temperature has been achieved we will start the fermentation process. We blend just the right amount of yeast and nutrition to bring them to life and start the process. During fermentation the winery fills with the aroma of wine being made, smells a lot like a bakery. This process takes about 4 weeks to get it to the point of racking. We then rack it from one tank to the other to remove the sediment created from the fermentation process. At this point we check alcohol content, color, smell and most important TASTE! In wine making the taste is king and being able to taste through a young wine is a time honored skill. The fundamentals of making wine are very simple in fact thousands of years ago it was done accidentally. Having the ability to blend and shape a wine into something great is a little more than just an accident. The wracking process will continue until all sentiment has been removed this could be 2 to 3 times more. After all sentiment has been removed from the wine we then transfer it to the appropriate container for aging, oak barrels, Stainless steel tanks etc… All wine requires some level of aging; some are much longer than others. Typically red wine will age much longer than white and dry wines will age much longer than sweet. All wine requires bottle ageing.

After all of the aging process has taken place in oak barrels, stainless steel tanks, etc. It’s off to the Bottler where we hand bottle an average of 700 bottles an hour with one person. In fact it takes two people to hand cork just to keep up with the bottler. After the cork is in the bottle we seal it with a PVC capsule and let stand for 24 hours to let the wine breath. We will label bottles as they are needed due to our custom label program where we will custom build and label bottles for any occasion per our customers specifications.

Bottling in ceramic dates back thousands of years and we are one of the only wineries still doing it. Although we will still use glass for certain wines we made the decision to age many of our wines in ceramic because it is the best thing for the wine. The only reason glass is used today is simply cost. Glass is not the best thing for all wine.
